◆15 g apple cider vinegar or lemon juice
◆100 g neutral oil (light olive, avocado, or melted coconut)
◆200 g granulated cane or coconut sugar
◆10 g vanilla extract

◆8 g baking powder
◆3 g baking soda

Vegan Cream Cheese Frosting
◆56 g vegan cream cheese (like Kite Hill or Violife), softened — about 1/4 package
◆29 g vegan butter, softened — about 2 tablespoons
◆100 g powdered sugar
◆2 g vanilla extract (about 1/2 teaspoon)
◆4–8 g plant milk, if needed for consistency
◆40–50 g rainbow sprinkles for topping
How to Make It
Part 1 — Make the Vanilla Cake
1. In a small bowl, make your vegan "buttermilk": mix 240 g plant milk + 15 g vinegar. Let sit 5 minutes until curdled.
2. Add ingredients to your bread machine pan in this order: pour in the buttermilk mixture, add oil (100 g), sugar (200 g), vanilla (10 g), flour (300 g), baking powder (8 g), baking soda (3 g), salt (3 g).
3. Select the CAKE setting on your bread machine.
4. Check batter consistency after initial mixing and scrape down the sides with a silicone spatula if needed (about 2–3 minutes). Batter should be thick but pourable, like pancake batter. If too thick, add plant milk 1 tablespoon at a time. If too thin, add flour 1 tablespoon at a time.
5. Let machine complete the full cake cycle (usually 50–60 minutes).
6. Test for doneness: insert a toothpick in the center — it should come out clean or with just a few moist crumbs.
7. Cool in the pan 10 minutes, then turn out onto a cooling rack. Cool completely (at least 2 hours) before frosting.
Part 2 — Make the Cream Cheese Frosting
1. Beat together softened vegan cream cheese and vegan butter until smooth and fluffy (use a hand mixer or whisk vigorously).
2. Gradually add powdered sugar, mixing well.
3. Add vanilla extract. Adjust consistency with plant milk if needed — it should be spreadable but hold its shape.
4. Frost the fully cooled cake generously, then immediately top with rainbow sprinkles before the frosting sets. 🌈
